ALOHA FESTIVALS SEEKS APPLICANTS FOR
2010 AND 2011 O‘AHU ROYAL COURT
HONOLULU – Aloha Festivals, the annual cultural celebration of Hawai‘i’s music, dance and
history, is continuing to accept applications for king, queen, prince, princess and court
members for the 2010 and 2011 O‘ahu Royal Court. Applicants must be of Hawaiian ancestry
and may be expected to make various appearances during their reigning years, from
August 2010 to July 2012.
King and queen applicants must be 35 years of age or older, while prince and princess
applicants must be at least 16 to 18 or older. All other court candidates must be 14 years of
age or older. Scholarships will be awarded to the chosen prince and princess to further their
education after high school.
Those interested are asked to complete an application and include both a headshot and fulllength
photo, as well as proof of Hawaiian ancestry. Applications can be found at
www.alohafestivals.com, (click “other” and “download forms”). Applications must be received
by Sunday, July 18, 2010. Mail applications to the Aloha Festivals Royal Court Committee, PO

Cook the Book: 'Edible: A Celebration of Local Foods'

One of my favorite food-related periodicals doesn't come to me in the mail monthly, and doesn't even require a paid subscription. Edible is a network of locally based food magazines that are free to readers at a number of restaurants and specialty food shops.
With a staggering 62 magazines being published seasonally in areas ranging from Bozeman, Montana to Hawaii and Louisville, Edible has been reporting on local foodways, producers, and restaurants since 2002, and more Edible publications are sprouting up each year.
Gorgeous photography and intelligent writing combined with delicious regional recipes have made Edible into one of the most exciting food-related periodicals out there but since the issues are only distributed locally, getting your hands on a copy of Edible Cape Cod isn't an easy task if you live outside of the area.
Thankfully, for all of the Edible readers out there who are curious about what other editions of the magazine are all about, co-founders Tracey Ryder and Carole Topalian have recently published Edible: A Celebration of Local Foods, a collection of articles taken from various editions of Edible profiling farmers, chefs, and artisans from around the country along with comprehensive lists of the essential people, places, and things.
In addition to all of this wonderful local food-centric info, the book is brimming with lovely recipes organized by season. Everyday this week we will be sharing springtime recipes from Edible: A Celebration of Local Foods including Lobster Rolls, Rhubarb Bread Pudding with Whiskey Sauce, and Egg Noodles with Fava Beans, Leeks, and Morels.

A culinary cruise around Kaua‘i

My previous eating experiences on Kauai have been limited to reconstituted backpacker food and fruit smoothies from juice shacks. A lot has changed since those wannabe-hippie days. For one, living in Hawaii has opened my palate to more local-style treats like donuts from Komodo Bakery, hot bread from Kanemitsu Bakery on Molokai and malasadas from Tex’s Drive Inn on the Big Island. And then there’s the locavore in me–my hippie sensibilities more deliberately focused in the farm-to-table movement–who seeks eateries embracing locally-grown ingredients. When travelling to neighbor islands, I may be easily distracted by rum-tasting rooms (Koloa Rum made from Kauai sugar is remarkably smooth) and brewing companies/restaurants that offer surprisingly good, affordable food (Grove Café at the Waimea Brewing Company), but my focus on dining out tends to fall into two categories: local institution or locally-grown–with a little room for celebrity chef adoration on the side.

Hamura’s Saimin Stand

Falling in the local institution category, Hamura’s fills all the requirements for dining nostalgia: aunties working in the kitchen, a dining room that looks like it hasn’t changed since the day it opened and a limited menu centered around saimin, that uniquely local bowl of noodles that’s neither Japanese nor Chinese, and yet a little bit of both. All the seating is at communal tables that weave through the small restaurant like a maze. A regular beside us orders tersely: special, large, two beef. Translation: a large bowl of “special” saimin, which includes wontons, kamaboko, roast pork, shreds of luncheon meat (i.e. imitation Spam–such lofty heights Spam has reached that it’s worthy of imitation!) and chopped won bok. “Two beef”: two teri-beef skewers. We copy his order. But sadly, though all the signals have been promising–from the mostly local crowd packing the tiny place to the people ordering boxes of uncooked saimin to bring to relatives as omiyage–our bowl doesn’t live up to the hype. The saimin has been overcooked and is a bit mushy, the roast pork is bland, our luncheon meat lacks the crispness and flavor that comes from a good pan-fry, and our beef sticks might as well have been shoe leather in their toughness. Swirling the noodles in some hot mustard and shoyu saves it all. I wanted to like it, I really did.

Kauai Grill at the St.Regis Princeville

We’re a bit giddy walking into Kauai Grill, a Jean Georges Vongerichten outpost at the St. Regis Princeville. Maybe it’s the dusky colors over Hanalei Bay and the mountains as viewed through the dining room windows. Maybe it’s the comfortable opulence of the room, with the dark wood booths and strands of light hanging in the center, suspended like the legs of a jellyfish. More likely, though, it’s the name of the Executive Chef on the menu: Jean Georges Vongerichten. We’re chef groupies, starstruck by this chef with a 3-Michelin star restaurant and growing restaurant empire, though save for a gala opening dinner, he’s not actually in the Kauai Grill kitchen (probably as a result of said restaurant empire). It’s incongruent, then, when we realize the room is filled with screaming kids–or if they’re quiet, they’re crawling over the aforementioned booths.

Our appetizers included sashimi slices of kampachi with the merest adornments of Meyer lemon, pineapple and wasabi, and a crunchy, salty, rice cracker-crusted tuna with a creamy citrus chili sauce. For an entree, delicate, flaky fillets of moi were dusted with a powder of nuts and seeds and set atop a sweet and sour broth, pungent with truffle oil’s richness and offset with a touch of vinegar. Our other dish, hanger steak frites, may have been ordinary, but was simply good and the accompanying sauces–a black pepper jam and a plummy, citrusy J&G steaksauce–good enough to eat by the spoonfuls. If all the plates so far were light, unweighted by butter and cream, then desserts were almost ethereal. A lilikoi soufflé trapped all the flavor and tartness of passion fruit in a sugar-dusted cloud while a yuzu sorbet enrobed in white chocolate and garnished with shards of pavlova and Thai basil syrup banished all my previous disdain for pavlovas.

Sure, this straddling of Asian and French flavors is not terribly unique to Hawaii, but at Kauai Grill, the execution shows a restrained and balanced hand. Now if only the kids in the restaurant could behave the same way.

Bar Acuda

Bar Acuda’s ad in Edible Hawaiian Islands, a magazine for the locavore set, caught my eye like the Hanalei Farmers’ Market attracts musicians playing new age-y music. Tapas, or small plates meant to be shared are a dime a dozen on the mainland, but they have yet to catch on here, maybe because we feel personally insulted by small amounts of food on a plate.

The portions are indeed small at Bar Acuda, but we take revenge by ordering more and more of the warm, crusty bread. And if the plates are little, the flavors are all the more concentrated. Humboldt Fog cheese, a soft, aged goat cheese with the hint of a tangy blue, is paired with slices of apple and local honeycomb. Everything we have is good, but favorites (including the above cheese and apple plate) are a house-cured chorizo sausage redolent with spices and chili and grilled flank steak skewers with honey and chipotle.

Though dessert is usually my favorite course, nothing is particularly enticing, especially at $8 and up for some espresso and ice cream, even more expensive than the sweet counterparts at Kauai Grill. I do love the food and conviviality of tapas at Bar Acuda, but in the future, I may consider Bar Acuda a pre-dinner bite–the equivalent of bar snack food–rather than dinner itself, which was probably the original idea behind tapas anyways.

Hawaii Farmers Union joins family farming organizations worldwide in commending the U.S. Department of Justice for undertaking an investigation of Monsanto Corporation for anti-trust violations related to its concentration in the seed industry.

National Family Farm Coalition (http://farmertofarmercampaign.com/) issued a report titled “Out of Hand” in early December thoroughly describing the concerns that prompted this investigation. The farmers' primary concern is access to seed. As consolidation has increased through Monsanto's aggressive monopolization of the market, seed prices have reached an historic high, jumping 25-30% for GMO corn and soy from 2008-2009 alone. A strategy to "hook" farmers with lower introductory prices followed by dramatic increases linked to the 'stacking' of GMO traits, each with additional royalties, has brought Monsanto unprecedented profits.

Finally and perhaps of greatest concern is the shortage of conventional, “identity-preserved” seed. This is particularly disturbing since the stage was set for this shortage by Monsanto's policy in recent years of litigating against farmers who saved conventional seed. Farmers – now beset by dwindling margins due to the high cost of seed as well as other inputs, contending with "superweeds" resistant to the herbicides GMO crops were designed to sell, along with artificially low farm gate prices - are desperate for conventional seed stock. It comes as no surprise that establishing itself as the leader in conventional seed supply as well as GMO varieties is now a Monsanto Corporation projected goal.

In Hawaii, Monsanto's GMO Seed production occupies an estimated minimum of 4,800 acres. In addition to exploiting Hawaii's year-round growing season, abundant land, water and state tax incentives to grow the GMO seed stock that has hurt farmers and community food sovereignty worldwide, Hawaii Farmers Union members and other local citizens recognize several other impacts of Monsanto Corporation's dominating presence in Hawaii:

- Monsanto outbids smaller, local and family scale operations on agricultural land leases, monopolizing available premium agricultural lands - including an unconscionable 100 year leasehold on the island of Molokai.

- Monsanto outbids local producers in hiring farm laborers, exacerbating the ongoing labor shortage local farmers contend with.

- Monsanto's well-funded lobby and influence is leveraged on fundamental agricultural legislative and policy issues from GMOs to agricultural water access, again contributing to the disenfranchisement of local, family farmers.

Hawaii Farmers Union is the newest subdivision of National Farmers Union. NFU is distinguished among farming organizations by its progressive, grassroots-led policy. For over 107 years, NFU has been an effective and authoritative voice advocating for prosperity for family farmers, ranchers, fishers and communities while promoting stewardship and cooperation. Hawaii on course to avoid year-end tuna shortage

HONOLULU -- A feared year-end tuna shortage in Hawaii likely will be averted, meaning residents can eat their good-luck tuna at New Year's as usual.

Officials earlier estimated the Hawaii-based longline fishing fleet would hit its annual bigeye catch limit for waters west of the islands around the end of November. That threatened to deprive the Hawaii market of its favorite fresh- caught tuna just as demand peaks for the holiday.

But the National Marine Fisheries Service now believes the boats will reach their limit sometime after Dec. 20, allowing the fleet to deliver bigeye through year's end.

"For all intents and purposes, the market will still be receiving bigeye tuna through the end of the year," said Michael Tosatto, deputy regional administrator for the fisheries service in Honolulu.

Every new year, thousands line up at fish markets and grocery stores to buy their celebratory tuna supply. The custom of eating tuna at the beginning of the year dates to early Japanese immigrants, for whom eating sea bream at New Year's was good luck. Because sea bream isn't found in Hawaii waters, the new immigrants ate tuna instead. The ritual has since spread among Hawaii's various ethnic groups, and the tradition is celebrated statewide.

This is the first year locals faced the possibility of a bigeye fishery closure. That's because the international body governing the region's migratory fish stocks - the Western and Central Pacific Fisheries Commission - concluded last year that bigeye tuna was being overfished. Commissioners ordered that fisheries reduce their take by 30 percent overall.

The Hawaii longline fishery must do its part by cutting 10 percent from its 2004 harvest. That means fishermen will be allowed to bring in only 3,763 metric tons this year.

Tosatto said the fisheries service uses historical catch data and statistics for the number of boats currently fishing to estimate when the fleet will hit the limit. It plans to inform boats at least seven days before the limit will be reached.

Boats generally fish more than 100 miles from Hawaii and need as long as two weeks to return to the islands from their fishing grounds.

FRESH PINEAPPLE PIE

Dania & Lily added home made Coconut Ice Cream, here is their recipe, you might want to have it ready.

4 egg yolks

1/2 c sugar

2 t Maui vanilla extract

2 cans coconut milk (each 13.5 oz)

Wisk eggs and sugar until pale. Add coconut milk and vanilla. Heat over medium until it thickens. Do not boil. Remove from heat, strain, cool and put in ice cream maker. Chill at least 2 hours.

Fresh Pineapple Pie

Ingredients:

Pastry for 2 crust pie

1 medium to large pineapple (I prefer low acid Maui Gold pineapple)

2 eggs, slightly beaten

1 cup cane sugar

2 tablespoons cornstarch

1 tablespoon grated lime zest

3 tablespoon passion fruit pulp

1/8-teaspoon salt

Directions:

Cut peeled and cored pineapple in bite-size chunks. Place eggs in bowl and beat in sugar, cornstarch, lime zest, passion fruit puree and salt. Add pineapple chunks to wet mixture.

Turn into pastry lined 9" pie pan. Adjust top crust; flute edges and cut vents. I like to use the extra pastry dough and make a pineapple cut out on top of the crust. Brush top of pie with egg wash.

Bake in 425 oven approximately 45 minutes.

I check this pie about ½ way through to assure my edges aren't too brown. If so, I make a foil collar and cover the edges for the rest of the bake time.

THREE FARMS IN HAWAII ARE THE FIRST TO EARN ANIMAL WELFARE APPROVED SEAL

Eden Earthworks, Hawaii Lowline Cattle Company and Kauai Kunana Dairy Earn Certification

WASHINGTON, DC – Animal Welfare Approved is pleased to announce that Eden Earthworks in Mountain View, Hawaii Lowline Cattle Company in Honoka’a, and Kauai Kunana Dairy on Kauai’s North Shore, have recently been awarded the Animal Welfare Approved seal for high-welfare animal husbandry. Animal Welfare Approved is a free certification granted to family farmers adhering to the high animal welfare standards outlined by the non-profit program.

According to Animal Welfare Approved Program Director Andrew Gunther, “Hawaiians, like their mainland counterparts, are interested in purchasing locally produced farm products from sustainable, humane farms. Being able to find these products is especially important in a state where an estimated 85 percent of the food is imported. We are excited to be a part of the effort to grow Hawaii’s family farming community and to make sure Hawaiians can purchase products that align with their values.” Hawaii Governor Linda Lingle announced an initiative to increase Hawaii’s food self-sufficiency in her 2009 State of the Union address.

Farming in Hawaii presents some challenges that are not found on the mainland, especially for cattle production. Cattle that are born, raised and slaughtered in Hawaii are still very rare. According to Gunther, one of the challenges facing farmers in Hawaii is the lack of island-based slaughter facilities. “Cattle raised in Hawaii are routinely transported to the mainland for slaughter, which is extremely stressful for the animals and very unsound environmentally,” he said. “When our auditors went to visit, the lack of slaughterhouses was a concern, but we were pleased to see there are still some small slaughterhouses available and they were very willing to work with AWA.”

Gunther is impressed with the energy behind Hawaii’s commitment to building a diverse local agricultural system. “While there, we met with local extension agents and were quite impressed with their dedication to providing increased opportunities for Hawaii’s farmers. We are very much encouraged and the future is bright for meat, dairy and eggs from local, humane family farms in Hawaii.”

Farm Profiles

Increased food security is one of the guiding principles behind Eden Earthworks, run by Dr. Neena Roumell. Roumell is originally from Detroit and worked with low-income mothers there, who were given vouchers through the WIC program to buy fresh produce. “In Detroit,” Roumell noted, “there were over 300 community gardens, but there were none on this side of the Big Island when I arrived here. Hawaii is just starting to build its network of food production and farmstands, and I didn’t want lower income people to be left out. I looked at food models that concentrated on boosting income and nutritional intake and Eden Earthworks was formed.”

Eden Earthworks is a family owned farm and 501(c)(3) organization that provides agricultural outreach and education to low-income families and also offers them plots in a community garden. Currently, 35 families have plots and are raising food. Eden Earthworks also keeps a flock of laying hens that Roumell feels every farm needs to be sustainable. Eden Earthworks donates the eggs to food-based local charities but as Eden Earthworks expands, she plans to train the participating families in caring for the chickens and having them all share in the fresh eggs. “Becoming Animal Welfare Approved was an important thing to do,” she notes. “I wanted to be sure the chickens were getting the quality of care they deserved and having the AWA label reinforces that. In addition, the standards will help our beginning farmers to know how to care for the chickens on their own.”

Hawaii Lowline Cattle Company is proud to be part of the resurgence in Hawaii of raising and finishing cattle locally, on pasture. The farm was started by Rick and Haleakala Sakata and Dwayne and Tammie Cypriano, both of Ahualoa, Hawaii. Dwayne Cypriano, an independent rancher who formerly worked in cow-calf operations (keeping a breeding herd of cows and weaning calves for the feedlot system), and Rick Sakata saw an opportunity to do their part to advance Hawaii’s food self-sufficiency by building a herd of Lowline Angus cattle on their ranches. “Lowlines are Angus beef cattle in a compact, smaller frame size. They originated in Australia, where the beef is known for its excellent taste, texture and tenderness characteristics,” Sakata explained. “We were looking for two things when establishing our herd: cattle that were docile and cattle that were well-suited to beef production on grass, and that more efficiently converted grass to meat than today’s larger breeds. Lowline Angus cattle have great dispositions –calm and tame. Our grandchildren spend a lot of time helping us and we don’t worry about them so much around the Lowlines. Because of their moderate size, two Lowlines can use the pasture space of one of today’s larger breeds, providing more beef per acre of grass and making the land more productive. That’s very important on an island with limited pasture space.”

The Sakatas and Cyprianos purchased their first Lowlines at the start of 2008 and brought them to Hawaii from the mainland. They had the cattle flown in instead of shipped so that the journey would be less stressful, even though it was more expensive. “We want to take great care of our cattle and go the extra mile,” Rick Sakata says. “That’s why we decided to apply to Animal Welfare Approved – it aligned nicely with our beliefs and will give our customers another reason to trust the quality and integrity of our product.” Hawaii Lowline Cattle Company’s herd of Lowlines is currently the only registered

Lowlines in the state of Hawaii and when the first calf was born in September 2008, it was cause for celebration. “Our first island born calf,” Sakata says proudly. “A true Hawaiian.” Hawaii Lowline Cattle expects its first beef to be ready in early 2010.

Louisa and Bob Wooton of Kauai Kunana Dairy, which produces farmstead goat cheese, are also dedicated to their animals and the role they will play in bringing Hawaiians fresh, local, environmentally sustainable food. They have been raising goats in Hawaii since 1979 and making goat cheese for the past decade. “We are the only dairy on the island of Kauai,” Louisa Wooton says proudly. “Kauai Kunana Dairy is a true family farm. We built everything on the farm ourselves, including the house. Our eldest son Ryan and his wife Sarah are our partners.”

With a milking herd of approximately 28 goats and total herd of 40, the Wootons are pleased with the reception their goat cheese has received. “Almost all of our cheese is sold on the island of Kauai,” Wooton explains. “Even with the drop in tourism because of the economy, our business is doing great. We’ve found our community to be very committed to supporting local farmers and we’re increasing the number of restaurants that serve our cheese.”

The Wootons have high praise for their goats and chickens. According to Louisa Wooton, “Our animals are an integral part of our farm. Our goats are intelligent and friendly and besides supplying milk for great cheese, they mow the orchards and we turn their manure into fertilizer. Our chickens are in charge of the banana patch—they weed, scratch, eat the bad insects and thin the bananas. Interacting with our goats and chickens every day is one of the great joys of farming.”

For the Wootons, applying to be Animal Welfare Approved was an easy decision because it’s a true reflection of the care and respect they give their animals. “Having the Animal Welfare Approved seal is something we’re really, really proud of,” Louisa Wooton says. “Our customers are responding well to it and we put it on everything. We don’t see how any farm can survive that’s not AWA!”

Hindu Monastery in Wailua, Kauai

When Gurudeva founded the Hindu Monastery in Wailua 25 years ago, he directed his monks to seek and import the most beautiful plants and trees on the planet. He explained that he wanted to show that God has many faces. The blossoms peak normally on June 15th annually. This is a wonderful tidbit to archive on your calendars. Because word has gotten out that the gardens and the temple construction are truly one of the great wonders in Hawaii, and because visitor parking is limited, reservations must be made in advance, only if you wish to take the guided tour. (1-888-735-1619). Some of you have intended to visit the monastery for years. This is the prime time to do it.

In June, '09, 90 minute guided tours are offered on June 10th, 17th and 24th only and begin sharply at 9 am and 11 am. Since this is a monastery for monks, it is asked that everyone please cover their shoulders and legs to their ankles. This will also protect you from the mosquitoes who have a penchant for visitors. So, mosquito repellent, appropriate clothing and cameras with lots of battery and space for photos are strongly recommended. Umbrellas are optional.
